Crust
- 1 1/2 cups graham cracker crumbs
- 6 tablespoons melted butter
Cheesecake Filling
- 24 oz (3 blocks) cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
Layers and Toppings
- 4–5 Twix bars, chopped
- 1/2 cup caramel sauce, warm
- 1/2 cup chocolate chips or prepared ganache
- 1/4 cup heavy cream (optional, for ganache)
- Prepare the Crust: Combine graham cracker crumbs with melted butter until the mixture resembles wet sand. Press evenly into the bottom of a 9-inch springform pan to form a compact, firm crust. Chill in the refrigerator while preparing the filling.
- Make the Cream Cheese Filling: Beat softened cream cheese with granulated sugar until smooth and creamy, avoiding lumps. Add eggs one at a time, mixing gently after each addition, then stir in vanilla extract. Mix just until combined to prevent cracks.
- Assemble the Layers: Pour half of the cheesecake batter over the chilled crust. Sprinkle a generous layer of chopped Twix bars evenly over the batter. Pour the remaining batter over the candy pieces and smooth the surface with a spatula to cover the Twix uniformly.
- Bake and Cool: Preheat oven to 325°F (160°C). Bake cheesecake for 50–60 minutes, or until the center is set but slightly jiggly. Turn off oven and leave the cheesecake inside with the door slightly open for 1 hour to cool gradually and prevent cracking. Refrigerate for at least 4 hours or overnight before serving.
- Add Caramel and Chocolate Finish: Warm caramel sauce and drizzle it generously over the cooled cheesecake. For a ganache topping, heat heavy cream and pour it over chocolate chips; stir until smooth. Drizzle the ganache or melted chocolate evenly on top to finish.
Notes
- Use room temperature cream cheese and eggs for a smoother batter and better texture.
- Do not overmix the batter to avoid cracks or dense texture.
- Using a water bath with the springform pan wrapped in foil helps prevent drying and cracking.
- Chill the cheesecake thoroughly, preferably overnight, for optimal flavor and firmness.
- Chop Twix bars evenly for consistent texture and distribution.
