Instructions

  1. Prepare the Crust: Combine graham cracker crumbs with melted butter until the mixture resembles wet sand. Press evenly into the bottom of a 9-inch springform pan to form a compact, firm crust. Chill in the refrigerator while preparing the filling.
  2. Make the Cream Cheese Filling: Beat softened cream cheese with granulated sugar until smooth and creamy, avoiding lumps. Add eggs one at a time, mixing gently after each addition, then stir in vanilla extract. Mix just until combined to prevent cracks.
  3. Assemble the Layers: Pour half of the cheesecake batter over the chilled crust. Sprinkle a generous layer of chopped Twix bars evenly over the batter. Pour the remaining batter over the candy pieces and smooth the surface with a spatula to cover the Twix uniformly.
  4. Bake and Cool: Preheat oven to 325°F (160°C). Bake cheesecake for 50–60 minutes, or until the center is set but slightly jiggly. Turn off oven and leave the cheesecake inside with the door slightly open for 1 hour to cool gradually and prevent cracking. Refrigerate for at least 4 hours or overnight before serving.
  5. Add Caramel and Chocolate Finish: Warm caramel sauce and drizzle it generously over the cooled cheesecake. For a ganache topping, heat heavy cream and pour it over chocolate chips; stir until smooth. Drizzle the ganache or melted chocolate evenly on top to finish.
