Instructions

Spread the cubes in a single layer on a baking sheet. Roast for about 25 minutes, stirring halfway through, until the sweet potatoes are tender and slightly caramelized.
  2. Cook the Beef: While the sweet potatoes roast, heat the remaining 1 tablespoon olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, cooking until fragrant and translucent, about 3-4 minutes. Add the ground beef, season with cumin, salt, pepper, and the remaining smoked paprika, then sauté until the beef is browned and fully cooked, breaking it apart with a spatula into crumbly pieces.
  3. Assemble the Bowls: Once sweet potatoes and beef are ready, start building your bowls. Place a generous handful of roasted sweet potato cubes in the bowl first, then top with the seasoned ground beef.
  4. Add Cottage Cheese: Spoon a dollop of cottage cheese on top of the beef and sweet potatoes to add a creamy texture and extra protein.
