Ingredients

Scale

For the Dough

  • 2 1/2 cups all-purpose flour
  • 1 cup cold unsalted butter, cubed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 46 tablespoons cold water

For the Filling

  • Strawberry jam (about 1/2 cup)

For the Glaze

  • 1 cup powdered sugar
  • 12 tablespoons milk or cream

Instructions

  1. Prepare the dough: Mix cold, cubed unsalted butter with flour, sugar, and salt using your hands or a pastry cutter until the mixture becomes crumbly. Add vanilla extract and gradually add cold water, mixing just until the dough comes together. Be careful not to overmix to maintain flakiness. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes to firm up.
  2. Roll and cut the dough: On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut the dough into rectangles or squares using a cookie cutter or knife, making sure you have an even number of pieces for sandwiching.
  3. Add strawberry filling: Place a small spoonful of strawberry jam on half of the dough pieces, spreading evenly while leaving a border around the edges. Avoid overfilling to prevent leaking during baking.
  4. Seal the cookies: Lightly brush the edges of the jam-topped dough pieces with cold water. Place the remaining dough pieces on top and press the edges gently with a fork to seal completely, creating the classic pop tart edge and preventing filling from escaping.
  5. Bake to perfection: Arrange the assembled cookies on a parchment-lined baking sheet. Bake in a preheated oven at 350°F (175°C) for 18-22 minutes or until golden brown and slightly puffed. Watch the edges closely to avoid over-browning.
  6. Glaze and cool: While the cookies cool on a wire rack, mix powdered sugar with milk or cream to make a smooth, pourable glaze. Drizzle the glaze over the warm cookies and allow it to set for about 20 minutes before serving.

Notes

  • Chill the dough well to keep the cookies flaky.
  • Use a thick strawberry jam to avoid soggy cookies and leaks.
  • Leave a small border around the edges to prevent jam from leaking out.
  • Seal edges firmly with a fork for a tight seal and classic look.
  • Use parchment paper for easy cleanup and even baking.
