Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil, then cook your pasta according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water for later.
  2. Sauté the Mushrooms and Garlic: In a large skillet, heat olive oil or butter over medium heat. Add sliced mushrooms and cook until golden and tender, about 5–7 minutes. Add minced garlic and sauté for another minute until fragrant.
  3. Wilt the Spinach: Once mushrooms are cooked, add fresh spinach to the skillet and cook until just wilted, preserving its vibrant green color and fresh flavor.
