Ingredients

Scale

Main Ingredients

  • 500g potato gnocchi
  • 150g fresh spinach, roughly chopped
  • 200g mushrooms (cremini, shiitake, or portobello), roughly chopped
  • 3 cloves garlic, minced
  • 2 tbsp butter or olive oil
  • 200ml heavy cream (or plant-based alternative for vegan)
  • 50g Parmesan cheese, grated (or vegan cheese alternative)
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs (basil or parsley), optional

Instructions

  1. Prepare the Ingredients: Wash and roughly chop the fresh spinach and mushrooms. Mince the garlic finely to release its full flavor during cooking. Having all your ingredients prepped will keep the process smooth and efficient.
  2. Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the potato gnocchi and cook until they float to the surface, usually about 2-3 minutes. Scoop them out gently with a slotted spoon and set aside.
  3. Sauté Mushrooms and Garlic: Heat butter or olive oil in a large skillet over medium heat. Add the mushrooms and sauté until golden brown and their moisture has evaporated. Toss in the minced garlic and cook for another minute until fragrant.
  4. Add Spinach and Cream: Stir in the fresh spinach and cook until wilted, about 1-2 minutes. Pour in the heavy cream and let the mixture simmer gently until slightly thickened and the flavors meld, about 3-5 minutes.
  5. Combine Gnocchi and Sauce: Return the cooked gnocchi to the skillet and toss everything together carefully. Let the gnocchi soak up the sauce’s richness for a minute or two. Season with salt, pepper, and fresh herbs if using.
  6. Finish with Cheese: Sprinkle grated Parmesan over the dish, stirring to incorporate its savory richness. Serve immediately while warm and creamy.

Notes

  • Use fresh gnocchi whenever possible for the best texture and flavor.
  • Do not overcrowd the pan when sautéing mushrooms to ensure proper browning instead of steaming.
  • Season in layers by adding salt and pepper gradually during cooking to build balanced flavors.
  • Choose good-quality heavy cream or a suitable substitute for a rich, smooth sauce.
  • Handle gnocchi gently to avoid breaking their delicate shape during cooking and mixing.
  • Add fresh herbs like basil or parsley right before serving to preserve their bright aroma.
