Ingredients

Scale

Fruit Base

  • 4 ripe bananas, peeled and sliced

Cobbler Topping

  • 1 cup all-purpose flour (or gluten-free flour blend for gluten-free version)
  • 1/2 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 cup cold unsalted butter, cut into pieces
  • 1/2 cup milk (or plant-based milk for vegan option)
  • 1 tsp vanilla extract

Instructions

  1. Prepare the Bananas: Peel and slice the ripe bananas into even pieces. Arrange them evenly in a greased baking dish to form the fruit base.
  2. Mix the Topping: In a mixing bowl, combine flour, sugar, baking powder, and optional cinnamon. Cut in cold butter until the mixture becomes crumbly. Stir in the milk and vanilla extract until you have a smooth batter ready to pour.
  3. Combine and Bake: Pour the batter evenly over the banana layer in the baking dish. Spread gently if needed. Bake in a preheated oven at 350°F (175°C) for 25 to 30 minutes, or until the topping is golden brown and bubbly around the edges.
  4. Cool and Serve: Allow the cobbler to cool slightly to set for easy slicing. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

  • Use ripe bananas with plenty of brown spots for maximum sweetness and flavor.
  • Do not overmix the batter to keep the topping tender and cakey.
  • Use cold butter cut into flour to create a flaky, crispy topping.
  • Slice bananas uniformly to ensure even cooking.
  • Bake on the middle rack for even heat distribution and perfect browning.
