Ingredients

Scale

Main Ingredients

  • 1 lb peeled and deveined fresh shrimp
  • 1 lb baby potatoes, halved
  • 2 ears corn on the cob, cut into small rounds
  • 2 tbsp Old Bay seasoning
  • 3 garlic cloves, minced
  • 4 tbsp butter, cut into small pats
  • 1 lemon, cut into wedges
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prep Your Ingredients: Rinse the shrimp and pat dry. Halve the baby potatoes for faster cooking and cut the corn into small rounds. Mince the garlic and prepare lemon wedges and parsley for garnishing.
  2. Assemble the Foil Packs: Tear off large squares of heavy-duty aluminum foil. Layer the potatoes, corn, and shrimp on each sheet. Sprinkle generously with Old Bay seasoning and minced garlic. Add small pats of butter on top for richness.
  3. Seal and Cook the Packs: Fold the foil securely to create tightly sealed packets. Place the foil packs on a preheated grill or in a hot oven. Cook for 15 to 20 minutes or until shrimp are opaque and potatoes are tender.
  4. Finish with Fresh Garnishes: Carefully open the foil packs to release steam. Squeeze fresh lemon juice over the top and scatter chopped parsley to add brightness and freshness before serving.

Notes

  • Use heavy-duty foil to prevent tearing and keep steam inside for even cooking.
  • Don’t overcrowd packs to ensure even cooking and juicy ingredients.
  • Adjust cooking time if using larger shrimp to avoid overcooking.
  • Pre-cook potatoes by microwaving or parboiling if they are large to ensure tenderness.
  • Experiment with other seasoning blends like Cajun, Creole, or lemon pepper for variety.
