Shibuya Honey Toast

Shibuya Honey Toast

Shibuya Honey Toast is a popular dessert originating from Tokyo’s Shibuya district, featuring a thick loaf of golden, butter-toasted bread hollowed out and filled with crispy bread cubes, drizzled with natural honey, and topped with creamy vanilla ice cream and fresh fruits. This irresistible combination of crunchy, sweet, and creamy textures makes it a delightful treat perfect for sharing and customizing to your taste.

Ingredients

Scale

Main Ingredients

  • 1 thick loaf of white bread (Japanese milk bread – shokupan recommended)
  • Unsalted butter, enough to generously spread on bread (about 3-4 tbsp)
  • Pure honey, for drizzling (around 3-4 tbsp)
  • Vanilla ice cream, 2-3 scoops

Optional Toppings

  • Fresh fruits such as strawberries, bananas, or blueberries (1 cup mixed)
  • Powdered sugar, for dusting (1-2 tsp)
  • Chocolate sauce and chocolate chips for chocolate variation
  • Mixed berries (raspberries, blackberries, blueberries) for berry medley
  • Crushed nuts (almonds, pistachios, walnuts) for nutty crunch
  • Matcha powder or syrup for matcha edition
  • Coconut oil or plant-based butter and dairy-free ice cream alternatives for dairy-free version

Instructions

  1. Prepare the Bread: Cut the thick bread loaf into a block about 3 to 4 inches tall. Carefully hollow out the center, leaving approximately an inch of bread along the edges to form a sturdy shell.
  2. Butter and Toast: Generously spread unsalted butter on all sides of the hollowed bread block as well as the cut-out bread pieces. Toast both the block and cubes using a skillet or oven until they turn golden brown and crispy.
  3. Drizzle Honey: Immediately after toasting, drizzle pure honey over the toasted bread block and the bread cubes. The warmth of the bread will help the honey soak in slightly.
  4. Assemble the Toast: Place the hollowed bread block on a serving plate. Fill the hollow center with the toasted bread cubes and top generously with scoops of vanilla ice cream. Add fresh fruits on top or on the side if desired.
  5. Final Touch: Dust the assembled toast lightly with powdered sugar and add an extra drizzle of honey if preferred. Serve immediately to enjoy the contrast between the crunchy toast and creamy ice cream.

Notes

  • Choose thick and soft Japanese milk bread for the best texture and flavor.
  • Use unsalted butter generously for a rich, golden crust.
  • Toast the bread slowly and evenly to avoid burning and to develop perfect crispiness.
  • Use natural, raw honey for enhanced flavor and better appearance.
  • Serve the toast immediately after assembly to preserve texture contrast.
  • Store leftover toast and ice cream separately to maintain quality.
  • Reheat leftover toast gently in the oven before serving again.
