Instructions

  1. Prepare the Yeast Mixture: Warm the milk until lukewarm, then dissolve the active dry yeast and 1 teaspoon of honey into it. Let it sit for 5 to 10 minutes until frothy, indicating the yeast is activated.
  2. Mix the Dough: In a large bowl, combine the flour, salt, finely chopped sage, and eggs. Add the activated yeast mixture. Begin mixing, then gradually add the softened unsalted butter in small portions while kneading until a smooth, elastic dough forms.
  3. First Proof: Place the dough in a lightly greased bowl and cover with a damp towel or plastic wrap. Let it rise in a warm spot for 1 to 2 hours, or until doubled in size.
  4. Shape the Rolls: Punch down the risen dough gently. Divide into 12 equal pieces and shape each into a round roll. Place the rolls close together in a buttered baking dish to encourage soft sides.
