Ingredients

Scale

Pasta and Vegetables

  • 2 cups tri-color rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1 cup bell peppers (red, yellow, or orange), sliced into bite-sized pieces
  • 1/4 cup Kalamata olives, sliced (optional)

Dressing and Toppings

  • 1/3 cup Italian dressing (homemade or store-bought)
  • 1/4 cup grated Parmesan cheese (optional but highly recommended)
  • 2 tablespoons fresh basil or parsley, chopped

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool the pasta for the salad.
  2. Prepare the Vegetables: While the pasta cooks, wash and chop cherry tomatoes in halves, dice cucumber, slice bell peppers into bite-sized pieces, and finely chop red onion. If using olives and herbs, slice and chop accordingly.
  3. Combine Ingredients: In a large mixing bowl, combine the cooled pasta, vegetables, and olives. Toss gently to mix all ingredients evenly without breaking the veggies or pasta shapes.
  4. Dress the Salad: Pour your Italian dressing over the salad and toss again to coat everything thoroughly. The dressing infuses every bite with herbs, garlic, and acidity, making the salad irresistible.
  5. Add Finishing Touches: Sprinkle grated Parmesan cheese and fresh basil or parsley on top for an extra layer of flavor. Give it one final gentle toss and serve immediately or chill for later.

Notes

  • Don’t overcook the pasta; keep it slightly firm to prevent a mushy salad.
  • Chill the salad for at least 30 minutes before serving to allow flavors to meld and enhance refreshment.
  • Use fresh herbs like basil or parsley for brighter flavor and color.
  • Making homemade Italian dressing can improve flavor control and freshness.
  • Toss the salad just before serving to keep vegetables crisp and prevent pasta from soaking too much dressing.
