  • 1 medium yellow onion, diced
  • 12 bell peppers (any color), chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the ingredients: Slice the turkey sausage into bite-sized pieces, dice the onion, and chop the bell peppers and garlic. Have your frozen pierogi ready — no need to thaw.
  2. Cook the turkey sausage: Heat olive oil in a large skillet over medium heat. Add the turkey sausage and cook until browned on all sides, about 6-8 minutes. Remove and set aside.
  3. Sauté the veggies: In the same skillet, add the onions and peppers. Cook, stirring occasionally, until they soften and caramelize slightly, roughly 5-7 minutes. Add the garlic in the last minute to avoid burning.
  4. Cook the pierogi: Push the veggies to one side of the skillet, add a little more oil if needed, and place the frozen pierogi flat on the pan. Cook over medium heat until they turn golden brown and crispy on one side, then flip to crisp the other side. This usually takes about 10 minutes total.
  5. Combine and season: Return the cooked sausage to the skillet and stir everything together. Sprinkle smoked paprika, salt, and pepper evenly over the skillet, toss well, and cook for another 2-3 minutes to marry the flavors.
  6. Garnish and serve: Turn off the heat and finish with a sprinkle of fresh parsley before serving hot.
