Instructions

  1. Prepare Your Ingredients: Gather all ingredients and preheat your oven to 350°F (175°C). Lightly grease a mini donut pan to ensure easy removal once baked.
  2. Mix the Wet Ingredients: In a medium bowl, combine the pumpkin puree, peanut butter, and egg. Stir together until smooth and well blended.
  3. Add the Dry Ingredients: Gradually add oat flour, baking powder, and cinnamon (if using) into the wet mixture. Mix until just combined—avoid over-mixing to keep the donuts tender.
  4. Fill the Donut Pan: Spoon the batter evenly into each donut mold cavity, filling them about 3/4 full to allow slight rising during baking.
