Parmesan Potatoes with Garlic & Herbs

Crispy Parmesan Potatoes with Garlic & Herbs are a comforting and flavorful side dish featuring golden-brown, crunchy potatoes with tender interiors. Tossed with fresh garlic, aromatic herbs, and rich Parmesan cheese, this easy-to-make recipe delivers a perfect balance of cheesy, savory, and herbaceous flavors that complement a wide variety of main courses.

Ingredients

Potatoes

  • Yukon Gold or red potatoes – quantity as desired (typically 2 pounds)

Cheese

  • Freshly grated Parmesan cheese – 1/2 to 3/4 cup

Flavorings

  • Fresh minced garlic – 3 cloves
  • Fresh herbs (rosemary, thyme, or parsley) – 2 tablespoons chopped
  • Olive oil – 3 tablespoons
  • Salt – 1 teaspoon or to taste
  • Black pepper – 1/2 teaspoon or to taste

Instructions

  1. Prepare and Cut Your Potatoes: Wash the potatoes thoroughly and cut them into evenly sized cubes or wedges, leaving the skin on for extra texture and nutrients.
  2. Parboil for Fluffy Interiors: Boil the cut potatoes in salted water for about 5-7 minutes until they are just tender but not falling apart, ensuring a soft inside after baking.
  3. Toss with Olive Oil, Garlic, and Herbs: Drain the potatoes well and transfer to a large bowl. Add freshly minced garlic, chopped herbs, olive oil, salt, and pepper. Toss gently but thoroughly to coat every piece evenly.
  4. Add the Parmesan Cheese: Sprinkle grated Parmesan over the potatoes and toss lightly again so the cheese sticks to the surface for extra crunch and flavor.
  5. Bake Until Golden and Crisp: Spread the potatoes in a single layer on a lined baking sheet. Bake at 425°F (220°C) for 25-30 minutes, turning once halfway through, until golden and crispy on all sides.
  6. Finish with Fresh Herbs: Once out of the oven, garnish with a little extra fresh herbs for a pop of color and fresh aroma before serving.

Notes

  • Even cutting: Uniform potato pieces roast evenly preventing some pieces from burning while others remain undercooked.
  • Dry thoroughly: Make sure potatoes are dry before roasting for better oil and Parmesan adherence and crispiness.
  • Use fresh Parmesan: Freshly grated cheese melts and flavors better than pre-shredded varieties with additives.
  • Shake the pan: Turning the potatoes midway helps prevent sticking and promotes even browning.
  • Don’t overcrowd the pan: Ensure potatoes have space for air to circulate which keeps them crispy instead of steamed.
