Ingredients

Scale

Meat and Aromatics

  • 1 lb ground beef or Italian sausage
  • 1 medium onion, chopped
  • 23 cloves garlic, minced

Tomato and Broth Base

  • 28 oz crushed tomatoes (canned)
  • 4 cups chicken or beef broth
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Pasta and Cheese

  • 68 lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Garnishes

  • Fresh basil or parsley, chopped (for garnish)
  • Optional: grated Parmesan cheese, olive oil drizzle

Instructions

  1. Brown the Meat and Sauté Aromatics: Heat a large pot over medium heat. Add the ground beef or Italian sausage and cook until browned. Remove any excess fat if desired, then add the chopped onion and minced garlic. Cook until the onion is softened and fragrant.
  2. Add Tomatoes, Broth, and Seasonings: Pour in the crushed tomatoes and broth. Sprinkle in the Italian seasoning along with salt and pepper to taste. Stir everything together, combining well to form a flavorful base.
  3. Simmer the Soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 15 minutes, allowing the flavors to meld and intensify.
  4. Add Noodles and Cook: Break the lasagna noodles into bite-sized pieces and add them directly to the pot. Continue to simmer until the noodles are tender, about 10 minutes, stirring occasionally to prevent sticking.
  5. Stir in Cheeses: Lower the heat to low and gently fold in dollops of ricotta cheese. Then sprinkle shredded mozzarella over the surface and allow it to melt slowly into the soup, creating creamy, cheesy layers.
  6. Garnish and Serve: Finish by sprinkling freshly chopped basil or parsley on top for brightness and color. Ladle the soup into bowls and serve immediately, optionally topped with grated Parmesan cheese or a drizzle of olive oil.

Notes

  • Don’t overcook the noodles; add them toward the end to maintain a perfect al dente texture.
  • Use fresh herbs for garnish to brighten the flavors.
  • Layer the cheese by stirring in ricotta and sprinkling mozzarella on top for creamy texture.
  • Deglaze the pot after browning the meat with a splash of broth or wine to lift browned bits and enhance flavor.
  • Adjust the soup consistency by adding more broth for a thinner soup or simmering longer for a thicker texture.
