  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium zucchini, diced (or 1 cup green beans)

Liquids & Base

  • 1 (14 oz) can diced tomatoes
  • 6 cups vegetable or chicken broth

Beans & Pasta

  • 1 1/2 cups cooked cannellini or kidney beans, rinsed
  • 3/4 cup small pasta shapes (ditalini, elbow macaroni, or small shells)

Herbs & Seasonings

  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare your vegetables: Wash and chop onions, garlic, carrots, celery, and zucchini into bite-sized pieces to ensure every spoonful has a perfect mix of textures.
  2. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing until fragrant and translucent to develop the soup’s base flavor.
  3. Build the soup base: Add carrots and celery to the pot and cook gently until slightly softened. Pour in canned diced tomatoes and broth, bringing the mixture to a simmer.
  4. Add beans and pasta: Stir in rinsed cooked beans and the small pasta shapes, letting the soup simmer until the pasta is tender but still firm to the bite.
  5. Finish with fresh herbs and seasoning: Season with salt, pepper, and Italian herbs. Stir in chopped fresh basil and parsley just before serving to maintain their fresh flavor.

Notes

  • Use homemade broth if possible for richer flavor; store-bought broth is a convenient alternative.
  • Add pasta towards the end of cooking to prevent overcooking and mushy texture.
