Ingredients

Scale

Lentils

  • 1 cup dried lentils (brown or green recommended)

Aromatics

  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • 2 tablespoons olive oil

Liquids

  • 4 cups vegetable or chicken broth (or water)

Herbs and Spices

  • 1 teaspoon cumin (optional)
  • 1 teaspoon dried thyme (optional)
  • 12 bay leaves
  • Salt and pepper, to taste

Vegetables and Greens (optional)

  • 1 cup fresh spinach or kale (added near the end)
  • 1 cup diced tomatoes or bell peppers (optional)
  • 1 cup diced potatoes or root vegetables (optional for stew style)

Acidic Elements

  • 1 tablespoon lemon juice or vinegar (added before serving)

Instructions

  1. Prepare Your Ingredients: Rinse the lentils thoroughly under cold water until the water runs clear. Finely chop the onions, garlic, celery, and carrots to have everything ready for cooking.
  2. Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onions, garlic, celery, and carrots. Cook, stirring occasionally, until the vegetables are soft and fragrant, forming a flavorful base.
  3. Add Lentils and Liquids: Stir in the rinsed lentils, then pour in the broth or water. Bring the mixture to a gentle simmer to allow the lentils to soften and absorb the liquid.
  4. Season and Simmer: Add herbs, spices, salt, and pepper. Cover the pot and simmer for 25 to 30 minutes, stirring occasionally, until lentils are tender but hold their shape (unless using red lentils for a creamier texture).
  5. Final Touches: A few minutes before serving, stir in fresh greens like spinach if using. Finish the soup with a splash of lemon juice or vinegar to brighten the flavors. Adjust seasoning to taste.

Notes

  • Use brown or green lentils for a firmer texture; red lentils create a creamier soup.
  • Always rinse lentils to remove dust or debris for better taste and appearance.
  • Sauté aromatics first to develop sweetness and depth of flavor.
  • Adjust soup consistency by adding more broth or mashing some lentils.
  • Season gradually and taste frequently to avoid overpowering flavors.
