Instructions

  1. Prepare Your Ingredients: Slice the chicken breasts into thin, even pieces for quick and uniform cooking. Clean and slice the mushrooms. Chop the zucchini into bite-sized rounds or half-moons. Mince the garlic finely to release its aroma during cooking.
  2. Sauté Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken slices with salt, pepper, and half of the Italian seasoning. Add to the skillet and cook, stirring occasionally, until golden brown and cooked through. Remove chicken from the skillet and set aside.
  3. Cook Mushrooms and Zucchini: In the same skillet, add more olive oil if needed. Sauté the minced garlic for about 30 seconds until fragrant. Add mushrooms and cook until they release moisture and turn golden, about 5 minutes. Add the zucchini and sauté until tender but still slightly crisp.
  4. Combine and Simmer: Return the cooked chicken to the skillet. Sprinkle the remaining Italian seasoning. Pour in the chicken broth to deglaze the pan, scraping the bottom to lift all flavor-packed bits. Let simmer for a few minutes until the broth reduces slightly and flavors meld.
