Instructions

  1. Sear the Chicken: Set your Instant Pot to sauté mode and heat olive oil. Season the chicken breasts with salt and pepper, then sear them for about 2-3 minutes on each side until lightly browned. This locks in flavor and gives the chicken a beautiful crust before pressure cooking.
  2. Add Aromatics and Liquid: Remove the chicken temporarily and sauté minced garlic in the same pot until fragrant, about 30 seconds. Pour in chicken broth, scraping up any browned bits from the bottom to add rich flavor to the sauce base.
  3. Layer the Pasta: Break fettuccine in half and layer it evenly over the broth; do not stir. Place the seared chicken breasts on top of the pasta to ensure even cooking and prevent sticking.
  4. Pressure Cook: Seal the Instant Pot lid and set to manual high pressure for 6 minutes. After cooking, carefully perform a quick release to release the pressure, which keeps the pasta perfectly al dente.
