Ingredients

Scale

Meat and Protein

  • 1 lb lean ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed

Vegetables and Aromatics

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup chopped bell peppers (any color)

Liquids

  • 1 can (14.5 oz) diced tomatoes
  • 1 cup beef broth
  • 2 tablespoons olive oil

Spices and Seasonings

  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • Salt and black pepper, to taste
  • 1/4 teaspoon cayenne pepper (optional, for heat)

Instructions

  1. Step 1: Sauté Aromatics and Beef

Turn your Instant Pot to the sauté setting and heat the olive oil. Add chopped onions and garlic, cooking until fragrant and translucent. Add the ground beef, breaking it apart and cooking until no longer pink to develop a rich base flavor.

  2. Step 2: Add Spices and Vegetables

Sprinkle in chili powder, ground cumin, salt, pepper, and optional cayenne pepper. Stir well to coat the beef and aromatics evenly. Then add the chopped bell peppers and mix everything together to blend the flavors.

  3. Step 3: Pour in Liquids and Beans

Add the canned diced tomatoes, beef broth, and drained kidney beans. Stir to combine, scraping the bottom of the pot to remove any browned bits and prevent burning during cooking.

  4. Step 4: Pressure Cook

Seal the Instant Pot lid and set it to pressure cook on high for 20 minutes. After cooking, allow a natural release for 10 minutes to help the chili settle and tenderize further, then carefully perform a quick release to release any remaining pressure.

  5. Step 5: Final Taste and Serve

Open the lid and stir the chili. Taste and adjust salt, pepper, and spice levels as desired. Your Instant Pot Beef Chili is now ready to enjoy!

Notes

  • Brown the beef well to deepen flavor and reduce grease.
  • Use fresh spices for vibrant flavor.
  • Do not skip natural release to maintain moisture and tenderness.
  • Drain and rinse beans to reduce sodium and remove canning liquid taste.
  • Keep liquids to the recommended amount to prevent a soupy chili.
