Ingredients

Scale

For the Chicken Marinade

  • 1.5 lbs chicken thighs (bone-in, skin-on recommended)
  • 1/4 cup honey
  • 1/2 cup BBQ sauce (your favorite brand or homemade)
  • 1 tsp smoked paprika
  • Salt, to taste
  • Black pepper, to taste

For the Garlic Potatoes

  • 1.5 lbs baby potatoes, washed and halved
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp fresh thyme or rosemary, chopped (or a mix)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Marinate the Chicken: In a bowl, combine honey, BBQ sauce, smoked paprika, salt, and pepper. Thoroughly coat each chicken thigh with the marinade. Cover and refrigerate for at least 30 minutes and up to 2 hours to allow flavors to develop.
  2. Prepare the Garlic Potatoes: Wash and halve the baby potatoes. Toss them in olive oil, minced garlic, salt, pepper, and chopped fresh herbs like thyme or rosemary to evenly coat.
  3. Roast Chicken and Potatoes: Preheat oven to 425°F (220°C). Arrange the marinated chicken thighs and seasoned potatoes in a single layer on a baking sheet or roasting pan. Roast for 30 to 40 minutes, turning the potatoes halfway through, until chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden and tender.
  4. Broil for Extra Caramelization (Optional): For a crispier, caramelized edge on the chicken, switch oven to broil for the last 3 to 5 minutes of cooking. Monitor closely to prevent burning.
  5. Rest and Serve: Let the chicken rest for a few minutes after roasting to retain juiciness. Serve alongside the garlic potatoes, garnished with freshly chopped herbs or green onions if desired.

Notes

  • Use bone-in chicken thighs for better moisture and flavor retention.
  • Marinate longer for deeper flavor penetration.
  • Cut potatoes into uniform sizes to ensure even roasting.
  • Do not overcrowd the pan; allow space for crispiness.
  • Use a meat thermometer to ensure chicken reaches 165°F (74°C).
