Instructions

  2. Mix the Wet Ingredients: In a separate bowl, whisk together melted coconut oil, brown sugar, eggs, and vanilla extract until smooth and slightly frothy to create a rich, tender base.
  3. Combine Dry Ingredients: Sift together the flour, baking soda, baking powder, and salt in another bowl to evenly distribute the leavening agents for a uniform rise.
  4. Bring It All Together: Gradually fold the dry ingredients into the wet banana and pineapple mixture, stirring just until combined to avoid overmixing. If using, fold in shredded coconut and/or nuts now for added texture.
