Ingredients

Scale

Proteins and Vegetables

  • 1 lb lean ground beef
  • 1 lb fresh Brussels sprouts, washed and halved
  • 2 green onions, thinly sliced

Stir Fry Sauce and Seasonings

  • 3 tbsp soy sauce (or tamari/coconut aminos for gluten-free option)
  • 2 cloves garlic, finely minced
  • 1 tbsp fresh ginger, finely minced
  • 1 tbsp honey or brown sugar
  • 1/4 tsp red pepper flakes (optional)
  • Salt and pepper, to taste

Cooking Oils

  • 12 tbsp olive oil or sesame oil

Instructions

  1. Prep Your Ingredients: Wash and halve the Brussels sprouts. Finely mince the garlic and ginger. Thinly slice the green onions. Gather all other ingredients nearby for easy access during cooking.
  2. Cook the Ground Beef: Heat a large skillet or wok over medium-high heat and add a splash of oil. Add the ground beef and cook, breaking it apart with a spatula, until fully browned and slightly crisp along the edges. Season lightly with salt and pepper.
  3. Sauté the Brussels Sprouts: Push the beef to one side of the pan. Add a little more oil if needed. Place the Brussels sprouts cut-side down and let them sear without stirring for 4-5 minutes until golden brown. Then stir and cook until they are tender-crisp.
  4. Add Garlic, Ginger, and Sauce: Mix the garlic and ginger in with the beef and Brussels sprouts. Pour in the soy sauce, honey or brown sugar, and sprinkle in red pepper flakes if using. Stir to coat everything evenly and allow the sauce to caramelize slightly.
  5. Finish and Garnish: Once cooked through and combined, turn off the heat and sprinkle the sliced green onions over the top. Give one last gentle toss and serve immediately.

Notes

  • High heat is key: Use medium-high heat to get a good sear on both Brussels sprouts and beef for maximum flavor.
  • Don’t overcrowd the pan: Cook in batches if necessary to avoid steaming the vegetables.
  • Uniform cuts: Halve Brussels sprouts evenly to ensure consistent cooking.
  • Adjust sweetness: Modify the honey or brown sugar quantity to suit your taste.
  • Use fresh aromatics: Fresh garlic and ginger produce better flavor than powders.
