Perfect for grilling, these skewers cook quickly, delivering a healthy, flavorful protein option that’s great as an appetizer, main dish, or party snack.

Ingredients

Scale

Shrimp and Skewers

  • 1 pound fresh peeled and deveined shrimp
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes before using)

Marinade

  • 3 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste

Garnish

  • 2 tablespoons freshly chopped parsley

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together olive oil, freshly squeezed lemon juice, minced garlic, smoked paprika, salt, and pepper until well combined and aromatic.
  2. Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, tossing gently to coat evenly. Let them soak up the flavors for at least 15-20 minutes, but no longer than 1 hour to avoid becoming tough.
  3. Thread Shrimp Onto Skewers: Pre-soak wooden skewers in water for 30 minutes to prevent burning, or use metal skewers. Thread 4-5 shrimp per skewer, leaving some space between each to ensure even cooking.
  4. Preheat the Grill: Get your grill hot—medium-high heat works best for quick cooking and beautiful grill marks.
  5. Grill the Skewers: Place the shrimp skewers on the grill and cook for about 2-3 minutes per side until opaque and slightly charred. Avoid overcooking to keep shrimp juicy and tender.
  6. Garnish and Serve: Sprinkle freshly chopped parsley over the skewers before serving for a fresh finish and extra color.

Notes

  • Don’t Over-Marinate: Keep marinating time under 1 hour to prevent the shrimp from becoming rubbery.
  • Consistent Size: Choose shrimp that are similar in size for even cooking on the grill.
  • Preheat the Grill Properly: A hot grill ensures a good sear and quick cooking without drying out the shrimp.
  • Use Oil on Grill Grates: Brush grates lightly with oil to prevent sticking and maintain clean grill marks.
  • Flip Only Once: Turn skewers halfway through cooking to avoid handling shrimp too much and to keep them juicy.
