  • 2 garlic cloves, minced

  • 1 tablespoon balsamic vinegar or balsamic glaze
  • Salt and pepper, to taste
  • Optional: 2 tablespoons finely diced red onion

Instructions

  1. Prepare the Bruschetta Topping: Dice the ripe cherry tomatoes and finely chop the fresh basil. Mince the garlic cloves and, if using, finely dice the red onion. Combine all ingredients in a bowl with extra virgin olive oil, balsamic vinegar or glaze, salt, and pepper. Stir gently to blend the flavors and set aside to marinate while preparing the chicken.
  2. Season the Chicken: Pat the chicken breasts dry with paper towels. Brush both sides lightly with olive oil and season generously with salt and freshly ground black pepper to enhance natural flavors during grilling.
  3. Preheat and Grill the Chicken: Heat a grill or grill pan to medium-high heat. Place the chicken breasts on the grill and cook for 6 to 7 minutes per side, until cooked through and charred. Ensure the internal temperature reaches 165°F (74°C) for safety and juiciness.
