Ingredients

Scale

Chicken

  • 4 chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • Italian seasoning or herbs (optional), to taste
  • Olive oil, for cooking

Filling

  • 4 oz goat cheese
  • 2 cups fresh spinach
  • 2 garlic cloves, minced
  • Salt and pepper, to taste
  • Olive oil, for sautéing spinach

Instructions

  1. Prepare the Filling: Sauté fresh spinach lightly in olive oil with minced garlic until wilted. Let cool, then mix thoroughly with goat cheese and season lightly with salt and pepper to taste.
  2. Prepare the Chicken Breasts: Carefully slice a horizontal pocket into each chicken breast without cutting all the way through, creating space for the filling.
  3. Stuff the Chicken: Spoon the goat cheese and spinach mixture evenly into each chicken pocket, pressing gently to fill the cavity completely without overstuffing.
  4. Season and Sear the Chicken: Lightly season the outside of the chicken breasts with salt, pepper, and optional herbs. Heat olive oil in a skillet over medium-high heat and sear each chicken breast for 3-4 minutes per side until golden brown.
  5. Finish Cooking in the Oven: Transfer seared chicken breasts to a preheated oven at 375°F (190°C) and bake for 15-18 minutes until cooked through and internal temperature reaches 165°F (74°C).

Notes

  • Use a sharp knife to create clean pockets without slicing through the chicken for easier stuffing.
  • Do not overfill the chicken pockets to prevent filling leakage during cooking.
  • Use a meat thermometer to ensure the chicken is cooked safely and remains juicy.
  • Allow chicken to rest for a few minutes after cooking to retain juices.
  • Squeeze excess moisture from cooked spinach to prevent soggy filling.
