Instructions

  1. Prepare the Vegetables: Wash and roughly chop the ripe tomatoes, cucumber, red bell pepper, and red onion into pieces suitable for blending. Peel the cucumber if a smoother texture is desired.
  2. Blend the Ingredients: Place the chopped vegetables, garlic clove, extra virgin olive oil, sherry vinegar, salt, and pepper into a blender or food processor. Blend until smooth or to the preferred texture.
  3. Adjust Consistency: If the soup is too thick, add cold water or vegetable broth gradually and blend briefly again until you reach the desired consistency.
  4. Chill the Soup: Transfer the gazpacho into a bowl or container and refrigerate for at least one hour to let the flavors meld and ensure the soup is thoroughly chilled.
  5. Serve and Garnish: Taste and adjust seasoning if necessary. Serve in bowls or glasses and garnish with toppings such as diced cucumber, bell peppers, fresh herbs, or a drizzle of olive oil.
