Ingredients

Scale

Steak

  • 1 lb sirloin or ribeye steak, cut into bite-sized cubes
  • Salt, to taste
  • Black pepper, to taste
  • 3 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 2 tablespoons fresh parsley or thyme, chopped

Potatoes

  • 1 lb baby potatoes, washed and halved
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare Potatoes: Wash and halve the baby potatoes, then parboil them in boiling water for about 8 minutes until they are slightly tender. Drain thoroughly and let them dry completely to ensure they become crispy during cooking.
  2. Sear the Potatoes: Heat olive oil in a large skillet over medium-high heat. Place the potatoes cut-side down in the skillet and cook for 8-10 minutes until golden brown and crispy, flipping occasionally to evenly brown all sides. Remove from the skillet and set aside.
  3. Cook the Steak Bites: Season the steak cubes generously with salt and black pepper. In the same skillet, melt the butter over medium heat, then add the minced garlic and cook until fragrant. Add the steak bites and sear them for 3-5 minutes, turning to brown all sides and cook to your preferred doneness.
  4. Combine and Finish: Return the crispy potatoes to the skillet with the steak bites. Toss gently to coat everything in the garlic butter sauce. Sprinkle fresh herbs over the top and cook for an additional 1-2 minutes to meld the flavors together. Remove from heat and serve immediately.

Notes

  • Pat steak cubes dry before cooking to achieve the perfect sear without steaming.
  • Avoid overcrowding the pan by cooking in batches if necessary to maintain high heat and crispiness.
  • Let steak rest for a few minutes after cooking to lock in juices and maximize tenderness.
  • Use fresh garlic for the best aroma and to prevent bitterness.
  • Use high-quality butter to boost flavor and richness.
