Instructions

  2. Heat the oil: Pour about 2 to 3 inches of vegetable or canola oil into a deep fryer or heavy pot. Heat the oil to 350°F (175°C), using a thermometer to maintain a consistent temperature for even frying.
  3. Shape and fry the sticks: Transfer the batter into a piping bag or plastic squeeze bottle fitted with a narrow tip. Pipe strips of batter directly into the hot oil, about 3 to 4 inches long. Fry in small batches without crowding, flipping the sticks once after 1 to 2 minutes, until golden brown all over.
