Ingredients

Scale

Main Ingredients

  • 34 medium Yukon gold or red potatoes, washed and cut into evenly sized cubes or slices
  • 1 large yellow onion, sliced into thin strips
  • 12 oz smoked Polish sausage (kielbasa), cut into bite-sized pieces or rounds
  • 2 tbsp olive oil or butter for frying
  • 2 cloves garlic, minced (optional)
  • Salt and freshly ground black pepper, to taste

Optional Ingredients

  • Fresh parsley or thyme, chopped (for garnish)
  • Red pepper flakes or hot sauce (for spicy variation)
  • Additional vegetables such as bell peppers, mushrooms, or spinach
  • Shredded cheddar or parmesan cheese (for cheesy finish)
  • Rosemary or sage (for herb infusion)

Instructions

  1. Prepare the ingredients: Wash and cut the potatoes into evenly sized cubes or slices to ensure they cook uniformly. Slice the yellow onion into thin strips. Cut the smoked Polish sausage into bite-sized pieces or rounds.
  2. Cook the potatoes: Heat olive oil or butter in a large skillet over medium heat. Add the potatoes and cook, stirring occasionally, until they begin to brown and become tender, about 15 minutes.
  3. Add onions and garlic: Push the potatoes to one side of the skillet and add the sliced onions. Stir occasionally until onions soften and caramelize slightly, about 5-7 minutes. Add minced garlic in the last minute of cooking to release its aroma.
  4. Incorporate the sausage: Add the smoked Polish sausage pieces to the skillet and sauté with the potatoes and onions until the sausage is heated through and slightly browned, about 5 minutes.
  5. Season and finish: Season everything with salt and pepper to taste. If desired, sprinkle freshly chopped herbs on top. Gently toss all ingredients together and cook for another minute to combine the flavors before serving.

Notes

  • Pre-cook potatoes by parboiling for 5 minutes to reduce frying time and ensure tenderness.
  • Use a cast-iron skillet for even heat distribution and crispier potatoes.
  • Do not overcrowd the pan; cook in batches if needed to avoid steaming.
  • Opt for authentic smoked Polish sausage for the best smoky flavor.
  • Adjust seasoning gradually and taste as you go to avoid over-salting.
