Shrimp and Vegetables

  • 1 lb peeled and deveined shrimp
  • 2 medium fresh tomatoes, diced
  • 1 medium zucchini, thinly sliced into half-moons
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, roughly chopped
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste

Pasta and Oil

  • 8 oz linguine or spaghetti pasta (or preferred type)
  • 23 tbsp olive oil

Instructions

  1. Prepare Ingredients: Rinse and pat dry the shrimp. Slice the zucchini into thin half-moons and dice the fresh tomatoes. Mince the garlic and roughly chop the basil, setting all aside ready before cooking.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook your chosen pasta according to package instructions until al dente. Drain, reserving 1 cup of pasta water.
  3. Sauté Shrimp and Vegetables: Heat olive oil in a large skillet over medium-high heat. Add minced garlic and red pepper flakes; cook until fragrant. Add shrimp and cook 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. Make the Sauce: In the same skillet, add more olive oil if needed and sauté zucchini until tender-crisp. Add diced tomatoes and cook until they break down into a light sauce. Season with salt and pepper.
  5. Combine and Finish: Return shrimp to the skillet and toss with zucchini and tomato sauce. Add cooked pasta and gently mix all together. If the sauce is too thick, add reserved pasta water to loosen. Finish with chopped fresh basil and a drizzle of olive oil.
