Ingredients

Scale

Main Ingredients

  • 2 cups fresh zucchini, shredded
  • 2 large eggs
  • ½ cup breadcrumbs (or almond flour/gluten-free panko for gluten-free version)
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil, for frying

Optional Ingredients

  • 2 tablespoons fresh herbs (parsley or dill), chopped
  • Shredded carrots or corn, for extra texture and color
  • Chili flakes or smoked paprika, for added spice

Instructions

  1. Prepare the Zucchini: Start by shredding fresh zucchini using a box grater or food processor. Place the shredded zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible to ensure your patties won’t be soggy.
  2. Mix Ingredients: In a bowl, combine the drained zucchini with eggs, breadcrumbs, grated Parmesan, garlic powder, salt, and pepper. Stir in any optional fresh herbs or extra veggies for added flavor. Mix gently until the batter holds together well.
  3. Shape the Patties: Form the mixture into small, even-sized patties about two to three inches wide for crispy edges and even cooking. If too wet, add more breadcrumbs as needed to bind.
  4. Cook to Perfection: Heat olive oil over medium heat in a skillet. Place patties in the pan without overcrowding. Cook each side for 3 to 4 minutes until golden brown and crispy. Flip gently with a spatula to keep them intact.
  5. Drain and Serve: Transfer cooked patties to a paper towel-lined plate to absorb excess oil. Serve warm with your choice of garnishes or dips.

Notes

  • Drain zucchini thoroughly to prevent soggy patties.
  • Shape patties uniformly so they cook evenly.
  • Use medium heat to avoid burning the outside before the center cooks.
  • Use fresh ingredients for vibrant flavors.
  • Chill patties for 10 minutes before frying to help maintain shape.
