Ingredients

Scale

Sushi Rice

  • 1 cup short-grain sushi rice
  • 2 tablespoons rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

Tempura Crunch

  • 1/2 cup tempura flakes or panko breadcrumbs

Seafood

  • 4 oz fresh or marinated raw salmon or imitation crab sticks

Fresh Vegetables

  • 1 ripe avocado, sliced
  • 1/2 cucumber, sliced
  • 2 green onions, thinly sliced

Condiments & Garnishes

  • 2 tablespoons soy sauce (gluten-free if needed)
  • 2 tablespoons spicy mayo (mayonnaise mixed with sriracha and lime)
  • 1 tablespoon toasted sesame seeds
  • Optional: thin nori strips for garnish

Instructions

  1. Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice according to the package instructions. While warm, season the rice with a mixture of rice vinegar, sugar, and salt. Stir gently and let it cool slightly to room temperature.
  2. Chop and Prepare Fresh Ingredients: Slice the avocado, cucumber, and green onions into bite-sized pieces. Cut the raw fish or imitation crab into strips or chunks suitable for eating.
  3. Assemble the Bowl: In individual serving bowls, spoon a generous layer of the prepared sushi rice. Layer the seafood, avocado slices, and cucumber on top. Sprinkle the tempura flakes or panko breadcrumbs evenly over the bowl. Add toasted sesame seeds.
  4. Add Sauces and Garnish: Drizzle soy sauce and spicy mayo over the assembled ingredients. Finish with a garnish of thinly sliced green onions and optional nori strips for extra flavor and presentation.

Notes

  • Use fresh, high-quality seafood and produce for the best flavor.
  • Serve sushi rice slightly warm or at room temperature to enhance texture.
  • Adjust tempura flakes quantity to control crunchiness.
  • Make spicy mayo at home by mixing mayonnaise, sriracha, and a squeeze of lime.
  • Chop veggies and pre-cook rice ahead for faster assembly.
  • For vegan options, replace seafood with marinated tofu or sautéed mushrooms and use vegan mayo.
  • Use gluten-free soy sauce and certified gluten-free tempura flakes for gluten-free versions.
  • Panko breadcrumbs or crushed crispy onions are good tempura crunch substitutes.
  • Store leftovers in airtight containers refrigerated up to 2 days; tempura crunch will soften.
  • Do not freeze sushi bowl as fresh vegetables and crunchy components lose quality.
  • Reheat sushi rice gently before adding fresh toppings to preserve textures.
