Ingredients

Scale

Dough Ingredients

  • 3 ½ cups all-purpose flour (or gluten-free blend for gluten-free version)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 cup warm milk (about 110°F / 43°C)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 teaspoons minced garlic or 1 teaspoon garlic powder
  • ½ cup freshly grated parmesan cheese

Topping

  • 3 tablespoons melted butter (plus extra for brushing)
  • 2 tablespoons freshly grated parmesan cheese
  • 1 teaspoon freshly minced garlic
  • Optional: Fresh herbs (parsley, rosemary, thyme), red pepper flakes

Instructions

  1. Prepare the Dough: Activate the yeast by combining it with warm milk and a pinch of sugar. Allow it to become foamy (about 5-10 minutes). In a large mixing bowl, combine the flour, salt, minced garlic, and parmesan cheese. Pour in the yeast mixture and stir until a dough forms. Knead the dough by hand for 8-10 minutes or with a stand mixer for about 5 minutes until smooth and elastic.
  2. First Rise: Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm spot for 1 to 1.5 hours or until doubled in size.
  3. Shape the Rolls: Punch down the dough and divide it into even portions. Shape each portion into a smooth ball and place them close together in a greased baking dish or on a parchment-lined sheet to promote a soft side texture and a crispy top.
  4. Second Rise: Cover the shaped rolls with a towel and let them rise again for 30 to 45 minutes until puffy.
  5. Bake with Garlic Butter and Parmesan: Preheat the oven to 350°F (175°C). Brush the rolls generously with melted butter, then sprinkle additional parmesan cheese and freshly minced garlic on top. Bake for 20 to 25 minutes until golden brown and aromatic.

Notes

  • Use freshly grated parmesan for maximum flavor and better melting.
  • Do not over-knead the dough to keep the rolls tender.
  • Keep the dough in a warm environment to speed up the rising process.
  • Brush rolls with garlic butter both before and after baking for extra flavor and shine.
  • Allow rolls to cool slightly before serving, but serve warm for the best texture.
