  • 2 tablespoons tomato paste or 150ml tomato sauce

  • 250ml chicken or vegetable stock
  • 2 tablespoons cooking oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the Sausages: Slice the sausages into bite-sized pieces or leave whole based on preference. Brown them in a large pan over medium heat with a little oil until golden and cooked through to lock in juices and build flavor.
  2. Sauté Aromatics: Using the same pan, add chopped onions, minced garlic, and ginger. Cook for about 5 minutes until softened and fragrant, forming the base for the curry sauce.
  3. Add the Curry Powder: Sprinkle in curry powder and stir well to coat the aromatics evenly. Toast for 1-2 minutes to release the spices’ essential oils and deepen flavor.
  4. Build the Sauce: Stir in tomato paste or sauce, then pour in chicken or vegetable stock. Mix thoroughly, scraping the pan bottom to lift any flavorful bits. Simmer gently for 10-15 minutes until the sauce thickens and flavors meld.
  5. Combine and Warm Through: Return the browned sausages to the pan. Stir to coat evenly and cook together for another 5 minutes so sausages absorb the curry sauce.
