Crockpot Barbecue Ribs

These Crockpot Barbecue Ribs are slow-cooked to tender, juicy perfection, infused with a rich blend of spices and barbecue sauce. Perfect for effortless, flavorful meals that fall off the bone with smoky, sweet, and tangy notes, ideal for family dinners or impressing guests.

Ingredients

Main Ingredients

  • Pork Ribs (baby back or spare ribs) – 2 to 3 pounds
  • Barbecue Sauce – 1 to 1 ½ cups (store-bought or homemade)
  • Brown Sugar – 2 tablespoons
  • Garlic Powder – 1 teaspoon
  • Onion Powder – 1 teaspoon
  • Smoked Paprika – 1 teaspoon
  • Salt – 1 teaspoon
  • Black Pepper – ½ teaspoon
  • Apple Cider Vinegar – 2 tablespoons
  • Water or Broth – ½ cup

Instructions

  1. Prepare the Ribs: Remove the silver skin membrane from the back of the ribs to ensure tenderness and allow seasonings to penetrate fully.
  2. Season the Ribs: Combine brown sugar, garlic powder, onion powder, smoked paprika, salt, and pepper. Rub this dry spice blend generously over both sides of the ribs to evenly coat.
  3. Arrange in the Crockpot: Place the ribs curled with the meat side facing up inside the slow cooker. Pour apple cider vinegar and water or broth around the ribs, avoiding washing off the rub.
  4. Add Barbecue Sauce: Spread barbecue sauce liberally over the ribs, reserving some for glazing later to enhance flavor and stickiness.
  5. Slow Cook: Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours until the ribs become tender and start to pull away from the bone.
  6. Finish Under the Broiler (Optional): For caramelized, crispy edges, transfer ribs to a baking sheet, brush with reserved barbecue sauce, and broil for 3 to 5 minutes, watching carefully to avoid burning.

Notes

  • Remove the silver membrane to help flavors absorb and ribs become tender.
  • Use a thick barbecue sauce for better stickiness and flavor coating.
  • Slow cooking at low heat breaks down connective tissue for melt-in-your-mouth ribs.
  • Reserve some barbecue sauce to glaze ribs after slow cooking for extra moisture and taste.
  • Pack ribs side down or arrange in a circle for even heat distribution in the crockpot.
