Ingredients

Scale

Main Ingredients

  • 1 lb thinly sliced ribeye or sirloin (well-marbled beef preferred)
  • 1 cup finely chopped onions
  • 1/2 cup sliced mushrooms (optional)
  • 4 oz shredded provolone cheese or 1/2 cup Cheez Whiz
  • 810 egg roll wrappers
  • Oil for frying (neutral oil with high smoke point, such as vegetable or canola oil)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 tsp garlic powder

Instructions

  1. Prepare the Filling: Thinly slice the beef and sauté in a hot skillet with a bit of oil. Add finely chopped onions and mushrooms if using. Cook until all ingredients are tender and browned. Season with salt, pepper, and garlic powder. Remove from heat and let the filling cool slightly before adding cheese.
  2. Assemble the Egg Rolls: Place an egg roll wrapper on a flat surface in a diamond shape. Spoon a portion of the beef mixture into the center, then top with shredded provolone or a dollop of Cheez Whiz. Fold in the sides, roll tightly, and seal the edges with a little water or egg wash to prevent opening during frying.
  3. Fry Until Golden and Crisp: Heat oil in a deep frying pan or pot to 350°F (175°C). Carefully add egg rolls in batches, avoiding overcrowding. Fry for 3-4 minutes per side until golden brown and crispy. Remove and drain on paper towels to absorb excess oil.
  4. Serve Warm: Allow egg rolls to cool slightly to handle, then serve warm with your favorite dipping sauces or garnishes.

Notes

  • Use cold filling to prevent wrappers from becoming soggy or tearing.
  • Roll egg rolls tightly but gently to secure filling and avoid leaks.
  • Maintain frying oil temperature between 350°F and 375°F for optimal crispiness.
  • Do not overfill the egg rolls to ensure proper sealing and even frying.
  • Drain fried egg rolls well on paper towels to keep them crispy longer.
