Ingredients

Scale

Shrimp and Protein

  • 1 lb peeled and deveined shrimp

Vegetables and Flavorings

  • 1/2 cup sun-dried tomatoes, sliced
  • 4 cups fresh spinach, washed and drained
  • 3 cloves garlic, finely chopped

Sauce

  • 1 cup heavy cream or coconut cream
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for dairy-free)

Pasta

  • 8 oz pasta (spinach fettuccine, linguine, or gluten-free pasta)

Oils and Seasonings

  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the Ingredients: Peel and devein shrimp if needed. Finely chop garlic and slice sun-dried tomatoes. Wash and thoroughly drain fresh spinach to remove excess water that could dilute the sauce.
  2. Cook the Pasta: Bring a large pot of salted water to a boil and cook your pasta according to package instructions until al dente. Reserve about half a cup of pasta water before draining to help loosen the sauce later.
  3. Sauté Shrimp and Garlic: Heat olive oil in a large skillet over medium heat. Add shrimp and cook until pink and opaque, about 2 minutes per side. Remove shrimp and set aside. Then add garlic and sun-dried tomatoes to the skillet, sautéing until fragrant.
  4. Create the Creamy Sauce: Pour in heavy cream (or coconut cream) and bring to a gentle simmer. Stir in Parmesan cheese until melted and the sauce is smooth. Adjust with reserved pasta water as needed to reach desired consistency.
  5. Combine Everything: Add cooked shrimp, fresh spinach, and drained pasta to the skillet. Toss gently until spinach wilts and pasta is evenly coated with sauce. Season with salt and pepper to taste.

Notes

  • Don’t overcook shrimp to avoid rubbery texture; cook until just pink.
  • Use sun-dried tomatoes packed in oil for richer flavor and moisture.
  • Reserve pasta water to emulsify and perfect sauce consistency.
  • Add fresh spinach last to keep it tender and vibrant.
  • Garnish with fresh basil or parsley to brighten flavors.
