Instructions

  1. Prepare the Chicken Filling: Start by cooking and shredding the chicken breasts or thighs. Sauté finely chopped onions and garlic in a skillet until fragrant. Add the shredded chicken along with cumin, chili powder, and paprika, stirring to combine. Then mix in the softened cream cheese until the mixture is smooth and well blended.
  2. Warm the Tortillas: Lightly warm your tortillas in the microwave or on a skillet. This makes them flexible and less likely to tear during rolling.
  3. Assemble the Enchiladas: Spoon a generous amount of the chicken and cream cheese filling onto each tortilla. Roll up the tortilla tightly and place it seam-side down in a greased baking dish to keep its shape.
  4. Add Sauce and Cheese: Pour the enchilada sauce evenly over the rolled tortillas, ensuring they are fully covered. Sprinkle the shredded cheddar and Monterey Jack cheese evenly on top.
