Ingredients

Scale

Base Ingredients

  • 1 cup full-fat or low-fat cottage cheese
  • 1 to 1 1/4 cups all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 2 to 3 tablespoons water or milk

Optional Herbs and Spices

  • 1/2 teaspoon garlic powder
  • 1 teaspoon fresh or dried rosemary
  • 1/4 teaspoon black pepper
  • Fresh herbs like basil, thyme, or parsley (chopped, for mixing in or garnish)
  • Pinch of chili flakes or smoked paprika (for spicy variation)

Instructions

  1. Prepare the dough: In a large mixing bowl, combine the cottage cheese, flour, baking powder, salt, and any optional herbs or spices you choose to add. Pour in the olive oil, then gradually mix in water or milk until the dough becomes soft, slightly sticky, yet manageable and pliable.
  2. Divide and roll: Divide the dough into equal portions based on the desired flatbread size. Lightly flour a clean surface, then roll each portion into a thin circular or oval shape approximately 1/4 inch thick.
  3. Cook the flatbread: Heat a non-stick skillet over medium heat. Place one flatbread at a time onto the skillet and cook for 2-3 minutes on each side, or until golden brown spots form and the flatbread is cooked through.
  4. Serve warm: Remove the flatbread from the skillet and serve immediately to enjoy its soft, warm texture. Pair with your favorite dips, spreads, or toppings.

Notes

  • Rest the dough for 10 minutes before rolling to make it easier to handle.
  • Add flour gradually; too much flour can result in dense flatbread.
  • Use a hot skillet to achieve a crispy exterior without drying the bread.
  • Do not press the flatbread too hard when rolling; maintain consistent thickness for even cooking.
  • Experiment with toppings like garlic butter, fresh herbs, or cheese immediately after cooking for enhanced flavor.
