Instructions

  1. Prepare the Ganache Center: Heat the heavy cream until it just begins to simmer. Pour it over the chopped dark chocolate in a bowl and let sit for a couple of minutes to melt. Stir until smooth and creamy. Refrigerate the ganache until firm enough to shape into small 1-inch balls.
  2. Make the Mochi Dough: In a microwave-safe bowl, combine mochiko flour, cocoa powder, and sugar. Gradually add water while stirring until smooth. Cover loosely with plastic wrap and microwave in 30-second intervals, stirring in between, until the dough becomes thick and slightly translucent.
  3. Shape the Mochi: Dust your work surface and hands with potato starch to prevent sticking. Take a small piece of mochi dough and flatten it into a disc. Place a ganache ball in the center, then wrap the mochi dough around it, pinching edges to seal completely.
  4. Final Touches: Once all mochi pieces are shaped, let them rest at room temperature for 10 minutes. Optionally, roll them lightly in cocoa powder or extra starch to prevent sticking before serving.
