Ingredients

Scale

Tortilla Cones

  • 6 flour tortillas (store-bought or homemade cone-shaped)
  • Optional: cone molds for shaping

Chicken

  • 2 grilled chicken breasts, seasoned with salt, pepper, and garlic powder, sliced

Salad

  • 4 cups romaine lettuce, washed, dried, and chopped
  • 1 cup croutons, lightly toasted
  • 1/2 cup Caesar dressing
  • 1/4 cup freshly grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Black pepper, to taste

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, pepper, and a little garlic powder. Grill over medium heat until fully cooked and juicy, then slice into bite-sized pieces for filling.
  2. Crisp the Romaine Lettuce: Wash and dry the romaine lettuce thoroughly. Chop into small, manageable pieces so it fits easily into the cones and balances the creamy dressing.
  3. Make the Tortilla Cones: If homemade, shape tortillas around cone molds and bake at 375°F (190°C) for 10-15 minutes until golden and crispy. If store-bought, ensure they are sturdy and ready to hold fillings.
  4. Toss the Salad: In a large bowl, combine chopped romaine, sliced grilled chicken, croutons, and a generous drizzle of Caesar dressing. Toss gently to coat evenly without crushing the lettuce.
  5. Fill the Cones: Carefully spoon the tossed salad into each tortilla cone, filling to the top. Sprinkle with freshly grated Parmesan cheese and a squeeze of lemon juice. Add black pepper to taste.

Notes

  • Grill chicken evenly over medium heat, flipping only once to keep juicy.
  • Dry lettuce well to prevent soggy cones.
  • Lightly toast croutons for crunchier texture that resists softening.
  • Use quality Caesar dressing with real Parmesan for best flavor.
  • Fill cones just before serving to maintain crispiness.
  • Store leftover salad and chicken separately; keep tortilla cones at room temperature to preserve crunch.
  • Freezing not recommended as lettuce and cones lose texture.
  • Reheat chicken gently before assembling; avoid reheating tortillas or dressing.
