Instructions

  1. Prepare the Chicken: Season chicken pieces with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden brown on both sides to lock in juices and build flavor. Transfer chicken to a plate and set aside.
  2. Sauté the Vegetables: In the same skillet, add more olive oil if needed. Add chopped onions, bell peppers, and mushrooms. Sauté until onions are translucent and peppers soften, about 5-7 minutes, stirring frequently to prevent sticking.
  3. Build the Sauce: Add minced garlic and cook for about 30 seconds until fragrant. Pour in crushed tomatoes and chicken broth, stirring well. Sprinkle in oregano, basil, thyme, salt, and pepper. Let the sauce simmer for a few minutes to meld flavors.
