  • 1 tsp dried Italian herbs (basil, oregano, thyme)
  • 1 cup chicken broth or water
  • Salt and pepper, to taste
  • Freshly grated Parmesan cheese, for serving

Instructions

  1. Prepare the Ingredients: Finely chop the onion, mince the garlic, and grate the carrots to ensure the sauce has an even texture and balanced flavors.
  2. Cook the Pasta: Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Reserve some pasta water before draining.
  3. Sauté the Aromatics: Heat olive oil in a large pan over medium heat. Add onions and carrots and cook for about 5 minutes until softened. Stir in garlic and cook for an additional minute until fragrant.
  4. Brown the Chicken: Add the ground chicken to the pan and break it up with a spoon. Cook for 6–8 minutes until the chicken is opaque and lightly browned.
  5. Build the Sauce: Pour in the canned tomatoes and chicken broth. Sprinkle in the dried Italian herbs, salt, and pepper. Simmer on low heat for about 10 minutes to let the flavors deepen and the sauce thicken.
  6. Combine and Serve: Toss the cooked fettuccine into the sauce, adding reserved pasta water if the sauce seems too thick. Mix thoroughly to coat. Serve hot topped with a generous amount of freshly grated Parmesan cheese.
