Ingredients

Scale

Dough Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • Approximately 1/3 cup water (adjust as needed)

Cheese Filling

  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 2 tablespoons fresh herbs (parsley, thyme, or basil), finely chopped
  • Salt and pepper, to taste

For Garnish (Optional)

  • Fresh herbs (parsley, basil, or chives), chopped
  • Smoked paprika, a light dusting

Instructions

  1. Prepare the Dough: In a bowl, combine all-purpose flour, salt, and olive oil. Gradually add water while mixing, kneading until a soft, pliable dough forms that is not sticky. Adjust water or flour as needed to achieve the right consistency.
  2. Make the Cheese Filling: In a separate bowl, mix shredded mozzarella, cheddar, and cream cheese together. Add garlic powder, finely chopped fresh herbs, salt, and pepper. Stir until the mixture is evenly combined and creamy.
  3. Shape the Thumbprints: Divide the dough into small balls approximately 1.5 inches in diameter. Gently press your thumb into the center of each ball to create an indentation for the cheese filling.
  4. Fill and Bake: Spoon a generous but controlled amount of the cheese mixture into each indentation. Place the filled dough balls on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for 15-18 minutes or until the edges are golden and the cheese is bubbly and melted.
  5. Garnish and Serve: Once baked, sprinkle fresh herbs or a light dusting of smoked paprika over the appetizers. Serve warm for the best gooey cheese pull and flavor.

Notes

  • Chill the dough for 15 minutes before shaping to make it easier to handle.
  • Avoid overfilling the thumbprints to prevent cheese from oozing over the edges during baking.
  • Use freshly shredded cheese for better melting and moist filling.
  • Seal the dough around the thumbprint gently to ensure the filling stays inside without tearing.
  • Experiment with different herbs like oregano or rosemary for unique flavor variations.
