Ingredients

Scale

Fresh Ingredients

  • 1 cup ripe tomatoes, diced
  • 2 garlic cloves, finely chopped
  • 2 tablespoons fresh basil leaves, finely chopped

Cheeses

  • 8 oz cream cheese, softened
  • 1 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese

Other Ingredients

  • 1 tablespoon olive oil, plus extra for drizzling
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Balsamic glaze (optional, for garnish)

Instructions

  1. Prepare the Tomato Mixture: Dice fresh tomatoes and finely chop garlic and basil leaves. Toss these ingredients together with a splash of olive oil, a pinch of salt, and freshly cracked black pepper to enhance the natural flavors.
  2. Mix the Cheeses: In a separate bowl, blend the softened cream cheese, shredded mozzarella, and freshly grated Parmesan cheese until smooth and fully combined. This forms the creamy base of the dip.
  3. Combine and Season: Gently fold the tomato mixture into the cheese blend, taking care not to overmix so that the tomatoes remain fresh and bright. Adjust seasoning if needed by adding more salt, pepper, or a little olive oil.
  4. Bake to Perfection: Transfer the combined mixture into a baking dish. Bake in a preheated oven at 375°F (190°C) for 20 minutes, or until the cheese is bubbly and golden on top. This will create a warm, melty texture.
  5. Garnish and Serve: Allow the dip to cool slightly before garnishing with fresh basil leaves and optionally drizzling with balsamic glaze. Serve with toasted baguette slices, crackers, or fresh vegetable sticks.

Notes

  • Use room temperature cheeses for smoother blending without lumps.
  • Drain excess tomato juice to prevent a watery dip while keeping fresh tomato flavor.
  • Choose ripe tomatoes for natural sweetness and juiciness.
  • Toast bread slices for a crunchy contrast to the creamy dip.
  • Do not overbake; aim for bubbly cheese edges with a soft center to avoid drying out the dip.
