Ingredients

Scale

Fresh Produce

  • 2 ripe, juicy fresh tomatoes, washed and sliced thinly
  • Handful of fresh basil leaves, washed and sliced thinly

Dairy & Eggs

  • 2 large eggs
  • Fresh mozzarella cheese, torn or sliced into small pieces (about 1/4 cup)

Pantry Items

  • 1 tablespoon extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste

Optional

  • Balsamic glaze, for drizzling

Instructions

  1. Prepare Your Ingredients: Wash and slice the fresh tomatoes and basil leaves thinly. Tear or slice the fresh mozzarella into small pieces. Crack the eggs into a bowl, add salt and pepper, and whisk until well combined and slightly frothy.
  2. Heat the Pan: Place a non-stick skillet over medium heat and add a tablespoon of olive oil. Allow it to warm until shimmering but not smoking, ensuring even cooking.
  3. Cook the Eggs: Pour the beaten eggs into the pan. Using a spatula, gently push cooked edges toward the center, letting uncooked egg flow to the sides. Cook for 1–2 minutes until the eggs start to set but remain slightly moist on top.
  4. Add Caprese Ingredients: Evenly scatter the sliced tomatoes, fresh basil, and mozzarella over one half of the omelette. Allow the cheese to melt slightly while the omelette finishes cooking.
  5. Fold and Finish Cooking: Carefully fold the omelette in half to enclose the filling. Cook for another minute to meld flavors and ensure the cheese melts fully.
  6. Serve with a Drizzle: Slide the omelette onto a plate and optionally drizzle with balsamic glaze or a touch more olive oil for a beautiful presentation and enhanced flavor.

Notes

  • Use fresh, high-quality ingredients like ripe tomatoes and fresh basil for the best flavor.
  • Don’t overcook the eggs; keep the omelette slightly creamy for the best texture.
  • Cook on medium-low heat to prevent browning and ensure a tender omelette.
  • Let the eggs set slightly but stay moist before folding to avoid breaking the omelette.
  • Try alternative cheeses such as burrata or goat cheese for a different creamy experience.
