Ingredients

Scale

Protein & Pasta

  • 12 oz smoked or Andouille sausage, sliced into bite-sized rounds
  • 12 oz penne or rigatoni pasta

Vegetables & Aromatics

  • 1 cup red bell pepper, chopped
  • 1 cup green bell pepper, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced

Seasonings & Liquids

  • 12 tbsp Cajun seasoning (blend of paprika, cayenne, garlic, and herbs)
  • 1 cup chicken broth
  • 1 cup heavy cream

Cheese & Garnish

  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the Ingredients: Slice the sausage into bite-sized rounds and chop the bell peppers, onion, and garlic. Measure out the Cajun seasoning, chicken broth, and heavy cream for easy access during cooking.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, usually 8-10 minutes. Drain and set aside while preparing the sauce.
  3. Sauté the Sausage and Veggies: In a large skillet over medium heat, cook the sausage slices until browned and slightly crispy. Remove the sausage and set aside. Using the sausage drippings, sauté the chopped onion, garlic, and bell peppers until tender and fragrant, about 5 minutes.
  4. Build the Sauce: Sprinkle the Cajun seasoning over the vegetables in the skillet and toast for about 1 minute to release the spices’ aroma. Pour in the chicken broth and heavy cream, then stir well. Bring the mixture to a gentle simmer and cook until the sauce thickens slightly, about 3-5 minutes.
  5. Combine Pasta and Sausage: Return the cooked sausage to the skillet and add the drained pasta. Toss everything together thoroughly so the pasta is evenly coated with the creamy, spicy sauce.
  6. Finish with Parmesan and Parsley: Sprinkle the grated Parmesan cheese over the pasta and stir until melted and well combined. Garnish with fresh chopped parsley before serving to add brightness and color.

Notes

  • Use quality sausage for the best flavor and texture.
  • Cook pasta al dente to ensure it holds up well when mixed with sauce.
  • Toast the Cajun seasoning in the pan before adding liquids to deepen the flavor.
  • Simmer sauce gently to prevent separation and maintain a silky texture.
  • Add Parmesan cheese and fresh parsley last to preserve their fresh, vibrant taste.
