Ingredients

Scale

Lobster

  • 4 fresh lobster tails (68 oz each)
  • 4 tablespoons unsalted butter (for searing and basting)
  • Salt, to taste
  • Black pepper, to taste

Garlic Cream Sauce

  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1/2 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh parsley, chopped (plus extra for garnish)

Instructions

  1. Prepare the Lobster Tails: Using kitchen shears, carefully cut down the top shell lengthwise and gently pull the lobster meat out, resting it on top of the shell to ensure even cooking.
  2. Season and Preheat: Pat the lobster meat dry, then season lightly with salt and pepper. Preheat a skillet over medium heat with a generous amount of butter ready to melt.
  3. Sear the Lobster Tails: Place the lobster meat side down first and sear for about 2-3 minutes until golden brown, then flip and cook for another 2 minutes while basting continuously with melted butter.
  4. Make the Garlic Cream Sauce: Remove lobster tails from the pan and set aside to rest. In the same skillet, add minced garlic and sauté briefly until fragrant, then pour in heavy cream and lemon juice. Simmer gently until the sauce thickens slightly.
  5. Finish and Serve: Return lobster tails to the pan, spoon the garlic cream sauce over them, then sprinkle with fresh parsley before plating. Serve immediately for best taste and presentation.

Notes

  • Don’t overcook: lobster cooks quickly; watch closely for opaque meat to avoid rubbery texture.
  • Butter basting: continuously spoon melted butter over lobster while searing for maximum flavor and moisture.
  • Use fresh garlic: freshly minced garlic will give a more vibrant flavor than pre-minced options.
  • Room temperature lobster: let lobster tails sit out for 15 minutes before cooking for even cooking.
  • Low and slow sauce: simmer the cream sauce on low heat to prevent curdling and achieve perfect silkiness.
