Ingredients

Scale

Chicken

  • 1 lb boneless, skinless chicken thighs or breasts

Coating & Cooking

  • ½ cup mayonnaise (or beaten egg)
  • 1 cup panko breadcrumbs or regular breadcrumbs
  • 1/3 cup vegetable oil or avocado oil (for frying)

Bang Bang Sauce

  • ½ cup mayonnaise
  • 23 tbsp sriracha sauce (adjust to taste)
  • 1 tbsp honey or sugar
  • 1 tbsp rice vinegar or lime juice
  • ¼ tsp garlic powder or 1 garlic clove minced

Garnishes (optional)

  • 2 green onions, sliced
  • 1 tbsp toasted sesame seeds
  • Crushed peanuts (optional)

Instructions

  1. Prepare the Chicken: Dry the chicken pieces with paper towels and season lightly with salt, pepper, and garlic powder to enhance the natural flavors and prepare for the coating.
  2. Coat and Cook the Chicken: Dip the chicken pieces into mayonnaise or beaten egg to help the breadcrumbs adhere. Then coat evenly with panko or regular breadcrumbs. Heat the oil in a skillet over medium-high heat and fry the chicken until golden brown and cooked through, about 3-4 minutes per side. Alternatively, bake the chicken at 400°F (200°C) for about 20 minutes for a healthier option.
  3. Make the Bang Bang Sauce: Whisk together mayonnaise, sriracha, honey, rice vinegar, and garlic powder until smooth. Taste and adjust the spiciness or sweetness as desired to achieve a perfect balance of creamy, spicy, and tangy flavors.
  4. Combine and Serve: Toss the crispy cooked chicken pieces in the Bang Bang sauce or drizzle the sauce over the chicken just before serving. Garnish with sliced green onions and toasted sesame seeds to add freshness and crunch.

Notes

  • Use room temperature chicken for more even cooking and juicier results.
  • Do not overcrowd the pan when frying to maintain crispiness; cook in batches if needed.
  • If the sauce is too thick for tossing, thin it with a splash of water or lime juice.
  • Let the chicken rest a few minutes after frying to retain moisture and crisp texture.
  • Add fresh herbs such as cilantro or basil to brighten the flavor profile.
