Ingredients

Scale

Meatball Ingredients

  • 1 lb ground chicken (lean or mix of breast and thigh)
  • 1/2 cup Italian breadcrumbs (or gluten-free breadcrumbs / almond flour for gluten-free)
  • 1/4 cup grated Parmesan cheese (or substitute with mozzarella or omit for dairy-free)
  • 1/4 cup fresh parsley, finely chopped (or fresh basil or rosemary)
  • 2 cloves garlic, minced
  • 1/4 cup finely minced onion
  • 1 tbsp Italian seasoning (blend of basil, oregano, thyme)
  • 1 large egg, beaten
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine the ground chicken, Italian breadcrumbs, grated Parmesan, finely chopped parsley, minced garlic and onion, Italian seasoning, beaten egg, salt, and pepper. Mix gently until just combined to avoid overworking the meat, ensuring tender meatballs.
  2. Form the Meatballs: Using your hands or a small scoop, shape the mixture into even-sized meatballs about 1 to 1.5 inches in diameter. Place them on a parchment-lined baking sheet spaced slightly apart for even cooking.
  3. Bake to Perfection: Preheat the oven to 400°F (200°C). Bake the meatballs for 18-20 minutes until cooked through and golden brown, flipping halfway through baking. Confirm doneness with an internal temperature of 165°F (74°C).
  4. Serve and Enjoy: Allow the meatballs to rest a few minutes after baking. Serve over pasta with marinara sauce, as appetizers, or in sub sandwiches with your favorite toppings.

Notes

  • Do not overmix the meat to keep the meatballs tender and juicy.
  • Use a cookie scoop for uniform meatball size and even cooking.
  • Fresh herbs like parsley or basil enhance the flavor more than dried herbs.
  • Always check internal temperature with a meat thermometer for food safety.
  • Line the baking sheet with parchment paper or silicone mat to prevent sticking and ease cleanup.
